A healthy one-bowl brownies recipe that will blow your tastebuds.
A quick and easy vegan healthy one-bowl brownies recipe. It tastes surprisingly good, and it’s made with healthy whole ingredients. It only requires 10 ingredients and can be made in no time.
Last week my brother asked me to make him some brownies, I obviously said yes, to realize that I am running out of flour & almond milk and the store nearby is already closed!
What I did have, is a jar full of oatmeal, a small amount of whole wheat flour and some canned coconut milk!! (You can also use homemade coconut milk, recipe here)
So why not use oatmeal to replace the flour right?! Oatmeal and canned coconut milk are a pantry staple in my opinion. I always make sure to have some on hand.

Long story short, I ended up making a surprisingly good recipe with only a few everyday ingredients I found in my pantry. My brother loved it, and I already made three more batches who were devoured in no time I must add.
The best part is that I am not even concerned about how much brownies I ate the past week, this recipe is so much healthier than any store-bought brownies. It does contain some fat but it’s healthy fat!
This is by far one of my favorites. They have a very rich chocolate flavor, a fudgy inside and they’re not overly sweet. This brownie literally melts in your mouth, but still has some texture from the oatmeal.
I used vegan dark chocolate with 70% cacao for the batter along with some unsweetened cocoa powder. I also added some leftover chopped dark chocolate on top, but that’s optional.
You can definitely go for a milder/sweeter chocolate. Just keep in mind that it will affect the sweetness of your brownies, so you can adjust it.
Without further ado, here is my recipe for healthy vegan chocolate brownies that will (hopefully) blow your mind!

- 2 cup Oatmeal
- 1 1/2 cup Coconut sugar (could be replaced by another sweetener of your choice)
- 3/4 cup Whole wheat flour
- 400 ml Coconut milk
- 200 gr Vegan dark chocolate
- 5 tbsp Hot water
- 4 tbsp Ground flax seed
- 2 tbsp Vegan butter
- 2 tbsp Cacao powder
- 1 tbsp Vanilla extract
- 1/2 tsp White vinegar
- Salt

Preheat your oven to 180° C.

Cut your chocolate into pieces. Keep 2 tbsp for topping and melt the rest with the butter using your microwave. Melt for 30 sec, stir and repeat until the chocolate and butter are all melted.

Mix the ground flax seed with hot water and let sit.

In a large mixing bowl, add all dry ingredients followed by wet ingredients (including flax seed mixture and melted chocolate). Stir well or until everything is combined.

If your batter is too liquid, just let it sit for 5 to 10 min and you will get a regular looking brownie batter.

Line a baking tray with baking sheet. Pour the brownie batter on your baking tray and bake for approximately 45min or until the top is crackly.
