Healthy Caramel Popcorn - Vegan GF

This unbelievably healthy, vegan caramel popcorn will become your new favorite snack! It’s sweet, incredibly delicious, and easy to make.

As far as the sweet tooth goes, this caramel popcorn is an incredibly healthy, yet delicious snack option!

Don’t get me wrong, it’s not as healthy as a salad, but it’s free from refined sugars, hydrogenated oils, and crappy ingredients, you usually find in store-bought popcorn brands.

This caramel popcorn is sweet, salty with a hint of coconut flavor, and just SO GOOD. It’s one of those things, you literally can’t stop eating.

This recipe is very customizable, which you can use as a base to add any toppings you like: chopped nuts, chocolate chips…

How to make this caramel popcorn perfectly every time:

To make the caramel, add all your ingredients in a saucepan, except the baking soda. Bring to a boil over medium heat.

Once the caramel is boiling, add your baking soda and lower the heat. The caramel color will lighten and it will start to bubble up. Don’t worry, that’s normal!!

Remove caramel from the heat, and drizzle it over your popcorn, while tossing to coat every kernel. This part is tricky and can take a couple of minutes, just keep tossing until it’s well spread.

At this stage you are almost done, you just need to spread your caramel-coated popcorn on a baking tray and bake to get the popcorn its crisp back!

Once ready, you can add chocolate chips, chopped peanuts, or pecans to the popcorn while it is hot for better adhesions.

Allow the caramel popcorn to cool off by spreading it over a cooling rack.

Ingredients
  • 10 cup popcorn
caramel sauce
  • 1/2 cup coconut sugar (or cane sugar)
  • 4 tbsp plant-based milk (soy, rice, oat, or almond milk)
  • 3 tbsp coconut oil
  • 1 tbsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
Instructions
  1. Make your popcorn, and set aside.

  2. Preheat your oven to 150°C (300°F). Line a baking sheet with parchment paper and set aside.

  3. In a small saucepan, add your choice of plant-based milk, coconut oil, coconut sugar, vanilla, and salt. Bring to a boil on medium heat, stirring occasionally to avoid any sticking or burning.

  4. Once the caramel is boiling, add baking soda and lower the heat to low. At this stage the caramel will become lighter in color and bubble up, that's normal just keep an eye on it. Cook for 1 minute stirring constantly. Turn off the heat.

  5. In a large mixing bowl, place your popcorn and slowly drizzle the caramel while stirring gently with a spatula. Make sure to coat all the popcorn.

  6. Place your caramel-coated popcorn evenly on your baking sheet. Bake for 15 minutes.

  7. Take out from the oven and gently place the caramel popcorn on a cooling rack. The caramel popcorn will crisp up while cooling.

Recipe Notes
  • Once at room temperature, you can store your caramel popcorn in an airtight container with the lid closed.
  • This is best when served fresh but can be kept at room temperature for about 2 to 3 days.
  • If your popcorn is losing its crispness, pop back in the oven at 150°C for 4 to 5 minutes or until it's crispy again.

    This is fantastic, I use 23 cups of popcorn instead of 10. After finished baking I laid out on wax paper.
    This is a great treat. I will certainly make this again.
