Easy Healthy Almond Energy Bar Recipe

A vegan, gluten-free, healthy almond energy bars that taste so good you won’t even believe it’s healthy.

It’s been a while since I posted a recipe on the blog. I thought I’d share with you one of my all-time favorite healthy breakfast to grab on the go aka my almond energy bars.

They are amazing for that boost of energy in the morning, I am not a coffee drinker so I always need something to energize me and to really wake me up in the morning.

Super easy to make, no bake needed, all you really need is a food processor to make these healthy almond energy bar.

You can make them ahead and keep them in the fridge for up to 2 weeks. But I can assure you, they are so yummy that they won’t last that long!!

Healthy Almond Energy Bar

A vegan, gluten-free, healthy almond energy bars that taste so good you won't even believe it's healthy.

Ingredients
  • 1 Cup Almonds
  • 1 Cup Walnuts
  • 1 Cup Oat
  • 1/2 Cup Pitted dates
  • 1 Tbsp Chia seeds
  • 1 Tsp Vanilla extract
  • 2 Tbsp Hot water
  • 1/2 Tsp Salt
Instructions
  1. Start by pulsing the almonds and walnuts in a food processor for about 3 minutes or until you don't see big chunks of nuts.

  2. Place your nut mixture in a bowl, add oat, salt and chia seeds. Mix well and reserve.

  3. Place the pitted dates in your food processor and mix with the hot water. It will take 4 to 5 min to obtain a smooth paste.

  4. Combine all of the ingredients together to form a sticky dough. You can adjust the texture; If your dough is too sticky, add some oat, if not sticky enough add some water.

  5. Wrap a mold with plastic film. I used a silicone mold, but you can use anything you want. 

  6. Place the dough in the center of your mold, and spread it. Chill in the fridge for at least 1 hour before serving.

      These look like a better version of my favorite LaraBar. I love blending dates with nuts, but for some reason I never thought to add Chia seeds and oats and stuff!?
