
If you know me, you know how much i love desserts and quite frankly who don’t?!! One of my all time favorite dessert is lemon tarts. Oh Gosh, there is no word to describe my love for the sweet & sour combo, unfortunately lemon curd that you can buy from the store or even make yourself is quite often very unhealthy, full of butter and refined sugar so i decided to try and make it healthier so we can all indulge without feeling guilty. #zeroguilt
This recipe is super simple and yet incredibly delicious you won’t believe me until you try it. So to make these healthy lemon tarts you will need some unsweetened mini tart shells. I bought mine from a local bakery, but you can find similar products at your local supermarket. Or you can also just use crackers to dip in the lemon curd, if you don’t find mini tart shells.
Healthy Mini Lemon Tarts
For approximately 12 mini lemon tarts, you will need : 1/2 cup of freshly squeezed Lemon juice, 2 Egg yolk, 3 Egg white, 1/2 cup of Coconut sugar, 2 tbsp of grated Lemon zest, a pinch of Salt.
Start by mixing together the egg yolk and egg white, lemon juice, coconut sugar, lemon zest and salt in a thick saucepan ( to avoid the double boiler technique). Cook over low heat, and you want to whisk frequently the mixture, until the curd start to thicken and hold marks of your whisk (It took me about 6 minutes to get to this stage, the time may vary depending on the heat and your equipment).
Let the curd chill for 10 min, then you can start filling your mini tart shells, otherwise the heat from the curd can make the tart shell soggy. Hope you guys enjoyed this recipe, and as i said before, you can also just use it as a dip with some crackers and fruits.

This is a great idea! I’ve heard a lot about coconut sugar recently, and was curious about the best way to use it! It’s really helpful to come across your post, as I also love lemon tarts, but stopped eating them years ago, to avoid all the sugar.
