Date paste is the perfect healthy caramel substitute! It’s delicious and nutritious.
Dates are naturally packed with fibers, antioxidants, several vitamins and minerals including magnesium, calcium, and vitamin K.

What you’ll need to make date paste
- Dates. Any variety of dates work for this recipe although, I prefer Medjoul dates for their sweet and almost caramel-like flavor.
- Plant milk. You can use any plant milk to transform the dates into a caramel-like paste. Cashew, coconut, and almond milk yield a creamier and richer taste.
- A pinch of sea salt, to balance out the sweetness. Optional but highly recommended.
How to make date paste
- Pitt your dates.
- Soak them in hor water to make them softer, therefore easy to blend.
- Add your soaked dates to your food processor (or blender), along with your milk, and blend until smooth.
- Store covered in the refrigerator for up to 2 weeks!
Tips to make date paste perfectly every time
- Use good quality dates, ones that are moist, fresh, and almost sticky.
- If your dates are hard, they won’t blend easily and will require a longer soaking time in order to soften them. You can still boil them for 10 minutes to cut time on soaking.
- For a rich and creamier taste, use coconut cream instead of milk.
- A food processor works best to make date caramel You can still use a blender, just be aware that it requires more time and more liquid to get things going.
How to use date paste
- Spread on toast, crêpes, or pancakes; it’s a delicious and healthy alternative for syrup.
- You can add to your oatmeal to sweeten it or use it as a base for a quick bliss ball recipe.

- 25 dates
- 1/4 - 1/2 cup plant milk or water
- a pinch of sea salt (optional)

Pitt your dates and soak them in hot water for at least 15 minutes.

Drain your dates, and place them in a food processor or high-speed blender.

Add 1/4 cup of milk, and a pinch of sea salt (if using) and mix, scraping down the sides with a silicone spatula to help the blending process.

If your blender is having a hard time blending the dates, start adding 1 tablespoon at a time of liquid to help the process.

Be sure to only add enough liquid to form a paste. The amount of liquid will depend on your blender/food processor and your dates.
- Date caramel can be stored in a covered container in the fridge for up to 2 weeks.
