These vegan blender banana pancakes will become your new favorite recipe for quick and healthy breakfast/snack.

Easy to make! It’s as easy as throw all your ingredients in a blender and give it a whirl! All that’s left to do is to cook them up on the stovetop and serve with your favorite toppings!

Plus, they are customizable! Add blueberries, chocolate chips or cocoa powder to the batter. Make them your own!

How to make these vegan blender banana pancakes perfectly:

  1. Place soy milk, vanilla extract first then followed by the bananas and the rest of the ingredients.
  2. Blend until everything is combined. Let the batter rest for 10 to 15 minutes.
  3. Heat a cast-iron pan or a non-stick pan over medium heat. Once hot, pour some batter and cook for 2 to 3 minutes or until the edges are dry and the top bubbly then flip with a spatula. Cook for another minute or two.
  4. Place pancakes on a plate and cover with a kitchen towel.
  5. Serve with coconut yogurt, chopped banana, nuts, and a drizzle of maple syrup.

Tips for nailing these banana pancakes each time:

  • Place your liquid ingredients first in the blender, then follow with dry. This is important, especially if you don’t have a powerful blender.
  • Your plant-based milk should be at room temperature. It’s not crucial but I would highly recommend using room temperature ingredients to get the best results.
  • Blend the pancake batter until everything is just incorporated. DO NOT over-mix! Over-mixing develops the gluten further and leads to dense and hard pancakes.
  • Let the batter rest for 15 to 30 min. This step will allow the batter to better absorb the liquid ingredients and result in fluffier pancakes.
  • Only flip your pancakes when the edges are dry and the top is bubbly so you don’t end up with the batter spilling all over your pan.
  • Once each pancake is cooked, place on a plate covered with a kitchen towel to make sure it stays moist and fluffy!

Ingredients
  • 2 bananas (preferably ripe)
  • 1 cup soy milk
  • 1 cup oat flour
  • 1/3 cup spelt flour
  • 1 1/2 tbsp ground flaxseeds
  • 1 tbsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of sea salt
  • pinch of cinnamon (optional)
Instructions
  1. In a blender, add soy milk, vanilla extract, followed by the rest of the ingredients. Cover and pulse a few times until everything is just combined. DO NOT OVER-MIX!

  2. Let the batter rest for 10 to 15 min. You can skip this step if needed.

  3. Heat a non-stick pan over medium heat. Once hot, pour some batter (roughly 1/4 cup) on your pan and cook for 2 to 3 minutes or until the edges are dry and the top is bubbly and almost dry.

  4. Flip using a spatula and cook for another minute or two. It's done when both sides are nicely golden brown.

  5. Place pancakes on a plate and cover with a kitchen towel. Repeat the process until you finish the batter.

  6. Serve warm with your favorite toppings!

    Lovely! Made them for breakfast today. Do you think they will be ok to freeze the extra ones?
