Crispy oven-baked fries!? Sounds good right?!
Potatoes are a staple in my kitchen, I love to cook them in various ways. And french fries are my absolute favorite, especially when they have crispy edges and a tender center.
Getting that extra crispy texture without deep frying the potato fries doesn’t always work.
While doing some research on how to get the perfect French fries I stumbled upon this technique.
Nothing fancy, it requires to soak your fries in salted water and leave them to soak for 30min.
It does work amazingly for deep frying but, does it works when baked in the oven?? Well, I tried it, more times than I could tell and, it does work wonderfully!!
Basically, soaking your potato fries in salted water helps them release some of their moisture while losing the starch. That’s how they become crispy as they cook.

Wash and peel your potatoes. With a sharp knife cut thin slices of potato. The thinnest the crispiest the result will be.

After the fries have soaked, drain and rinse them. Pat dry with a clean towel.
Preheat your oven at 200° C.
Add dry fries to mix of spice and oil. Massage very well.
Line a baking pan with parchment paper. Transfer the fries on your baking pan in a single layer and space evenly.
Bake approx 30min, flipping halfway through. Increase heat to 220°C and continue baking for 5 min or until the edges look a little darker.
