This peach avocado salad with cucumber walnuts and mint is perfect for a barbecue or a summer party! It’s refreshing, sweet, and crunchy. The combination of sweet juicy peaches, avocado, cucumber, and fresh mint is delicious and refreshing!

It only uses simple ingredients and can be made in under 15 minutes for a simple, quick, and easy salad.

What you’ll need to make this peach avocado salad

For the maple dijon dressing you’ll need:

  • Extra virgin olive oil
  • Maple syrup
  • Dijon mustard
  • Lemon juice
  • A pinch of sea salt

For the salad you’ll need:

  • Lettuce
  • Peaches
  • Avocado
  • Cucumber
  • Walnuts
  • Raisins
  • Mint leaves

How to make peach avocado salad

  1. This salad is easy to throw together. Wash your lettuce and cut it into ribbons. Slice your avocados and peaches. 
  2. Using a vegetable peeler or mandoline, make long strips of cucumber.
  3. Add everything to a large mixing bowl.
  4. Add your crushed walnuts, raisins, and thinly sliced mint leaves.
  5. Then prep the salad dressing by mixing all the ingredients in a jar or a small mixing bowl.
  6. Dress your salad and toss everything together to coat. Starting with a small amount of dressing, and adding more as needed.

Tips to make this salad perfectly every time

  • The base of this salad is lettuce. You can use any kind of lettuce you like, baby spinach, or kale.
  • Use store-bought roasted crushed walnuts to cut on time from prepping.
  • Make a double batch of the maple dijon dressing and keep it in the fridge! It’s perfect for seasoning your bowls, salads, or roasted veggies with a delicious sweet vinaigrette.
  • Only dress the salad when ready to serve. If the salad is already dressed, it will wilt.
  • You can also meal-prep this salad into separate containers, and enjoy it throughout the week.

Ingredients
For the peach avocado salad
  • 1 head of lettuce
  • 1/2 cucumber
  • 2 ripe peach
  • 1/2 avocado
  • 3 tbsp crushed walnuts
  • 2 tbsp raisins
  • 2 mint leaves
For the maple dijon dressing
  • 1 tbsp olive oil
  • 1 tbsp dijon mustard
  • 2 tbsp maple syrup
  • 1 1/2 tbsp lemon juice
  • a pinch of sea salt
Instructions
  1. In a small jar, add all the dressing ingredients, close the lid, and shake well to combine. Taste test for seasoning, add more salt if needed.

  2. Cut your lettuce into ribbons. Wash thoroughly to remove dirt, then rinse and drain. Pat dry to remove any excess water.

  3. Cut your peaches into quarters then half those quarters. Using a vegetable peeler cut your cucumber into long strips. Cut your avocado into thin slices.

  4. Roll your mint leaves between your fingers to form a stick, then cut thinly.

  5. In a medium mixing bowl, add the drained lettuce, peaches, avocado, cucumber, crushed walnuts, and raisins.

  6. Add your dressing and toss to coat. Add a little dressing at first, then add more if needed.

  7. Garnish with thinly sliced mint leaves and serve!
