- 1 head of lettuce
- 1/2 cucumber
- 2 ripe peach
- 1/2 avocado
- 3 tbsp crushed walnuts
- 2 tbsp raisins
- 2 mint leaves
- 1 tbsp olive oil
- 1 tbsp dijon mustard
- 2 tbsp maple syrup
- 1 1/2 tbsp lemon juice
- a pinch of sea salt

In a small jar, add all the dressing ingredients, close the lid, and shake well to combine. Taste test for seasoning, add more salt if needed.

Cut your lettuce into ribbons. Wash thoroughly to remove dirt, then rinse and drain. Pat dry to remove any excess water.
