Mango coconut parfait, doesn’t it sound uplifting, right? I love this recipe in the summer but even more in the colder months. It’s so fragrant, vibrant and full of nutrients and vitamins.
The temperature is finally starting to drop and so does my mood. I do love winter time but sometimes my body and spirit miss the sun. So I came up with this sweet tropical orange goodness to boost my energy level a bit!
I made this few days ago, with some leftover mango and coconut cream. It’s very easy to prepare. No cooking required.
Let me tell you first, that this was a total hit. Everybody loved it. I must add that the mango I used was deliciously sweet and fragrant. I am not sure what variety it was but, I made some research and it seems like it’s the “Alphonso”, also called King of mango.
This variety of mango is fiberless and very sweet. It’s also known for being a great source of vitamin A and C. You guys need to try it if you can get your hands on one. It’s definitely the tastiest mango I had in my entire life.
Back to my recipe, so the first layer of the parfait is a mango chia pudding made with mango puree and chia seeds mixed together. Squares of mango were on the second layer and I topped it with an easy homemade whipped coconut cream.
I garnished with a delicious pumpkin spice granola (which I will be posting tomorrow on the blog, so keep an eye out!).
I know the combo might seems weird but I assure you that all together it’s so delicious.

Fresh and fragrant mango.
It only takes a few ingredients to make this energy-boosting recipe.
You can easily make it and store it in the fridge overnight for your next morning.

This mango coconut parfait recipe is the perfect uplifting breakfast! You can easily prep it the night before and enjoy this sweet tropical goodness for breakfast.
- 1/2 Cup Puree of fresh mango
- 2 Tsp Chia seeds
- 1/2 Cup Chopped fresh mango
- 4 Tbsp Coconut cream (from the top of a can of coconut milk)
- 1 Tbsp Coconut sugar
- 2 Tbsp Granola of your choice

Mix the mango puree with chia seeds and place in a clean mason jar or container.

Place the chopped mango on top.

Whisk together the chilled coconut cream with coconut sugar until fluffy. Top your preparation with the whipped coconut cream. Garnish with granola of your choice.
