How to roast garlic – An easy step-by-step method to roast garlic without oil. NO peeling involved!
Perfect as a spread on toasted baguette, mixed with a sauce, or a marinade. You can’t go wrong with roasted garlic!
Roasted garlic is garlic that’s baked in the oven until golden and buttery soft. And mild, sweet, and slightly caramelized in flavor.
Depending on the variety of garlic used, the sweetness can vary, but roasting will make any garlic you use mellow and mild.

How to roast garlic
There are several ways for roasted garlic. They mainly differ on how you prepare the garlic and the use (or not) of oil and or salt.
This method is my favorite because it is free from oil and takes less than 1 minute to prepare.
- Preheat your oven to 200°C (400°F).
- Choose a healthy and firm garlic head.
- Slice the very top of each head of garlic you are using. Make sure your cut uncovers some of the insides of the garlic cloves.
- Sprinkle with sea salt (optional step but I would recommend it)
- Wrap in foil each head of garlic.
To avoid using aluminum foil, you can place your garlic heads in a dutch oven, covered with the lid.
- Place on a baking tray and roast for about 45 minutes to 1 hour. Or until golden brown and fragrant and tender to the touch.
- Remove from oven and let cool for 10 minutes.
Unwrap the garlic head from foil. Squeeze the bottom of the clove up it should come right out.
You can store roasted garlic as is (wrapped in foil or not) in a small container in the fridge for up to 2 weeks.
Every time you need it, squeeze between your fingers to release a clove of garlic.
How to use roasted garlic
- Spread – spread on toasted bread and sprinkle with salt or furikake
- Sauce and purée – mix with sauces and vegetable purées.
- Salad dressing – add roasted garlic to salad dressing for more depth in flavor.
- Flavored vegan cheese and butter – mix with your favorite cream cheese or vegan butter for an umami-packed flavor.
