How to make chia seed pudding perfectly?
This is the basic recipe I use for every chia pudding I make. You can use any type of plant-based milk you prefer. I generally use soy milk (mainly for the protein content) or almond milk.
If you want to use coconut milk, I recommend using the drinking kind. The canned coconut milk can make chia pudding too heavy. If you want a creamier texture you can use half canned coconut milk and half plant-based milk.
Start by adding your milk and chia seeds to a mixing bowl. Whisk until combined, let sit for a couple of minutes before whisking again to remove lumps. Don’t skip this step! Otherwise, chia seeds tend to sink to the bottom and create a lump.
Cover your bowl and place it in the fridge for a couple of hours (preferably overnight) The magic happens in the fridge, where the seeds will absorb all of the liquid and transform into a pudding.

- 1 1/2 cup soy milk or any plant milk
- 1/3 cup chia seeds
- 2 tbsp maple syrup (optional)
- 1 tsp pure vanilla extract (optional)
- fresh or frozen fruits
- coconut yogurt
- granola
- fresh mint

In a small mixing bowl, add soy milk, chia seeds, and maple, vanilla if using. Mix well until everything is incorporated.

Let sit for 2 minutes and whisk again to make sure everything is well mixed. Cover and let sit for at least 2 hours or overnight in the fridge.

This chia pudding should be thick and hold itself together. If not add 1 tablespoon of chia seed, stir and let sit for at least 15 minutes before serving.

Serve with fruits, granola, berry compote, and yogurt.
- Store in an airtight container in the fridge for up to 1 week.
