Let me introduce you my Chocolate Coconut oat or the recipes that combine my two favorite things (food wise) chocolate and coconut!
Until last year, I had the worst diet EVER!! Not eating enough, starving myself for days and ending up binging like crazy on fast food, chocolate and all kind of food that aren’t good for me at all.
I wasn’t happy with my weight nor my body. I can’t tell where it all started but summer 2014 I decided that it was enough of being unhealthy and unhappy. It was the BEST decision of my life so far.
I decided to look for easy and tasty recipes that will satisfy my sweet tooth. After a lot of fails, here I am sharing my little knowledge and recipes with you!
Enough from the rambling, here is my take on chocolate coconut oatmeal!

I love oat for breakfast but it can get boring super fast, this recipe is everything but boring! Chocolate & coconut overnight oat with a hint of vanilla.
- 1 Cup Oat
- 1 Cup Vanilla flavored almond milk
- 1 Tbsp Unsweetened cocoa powder
- 1 Tsp Vanilla extract
- 3 Tbsp Agave syrup
- 2 Tbsp Shredded coconut

In a large mixing bowl, combine the oat with almond milk, vanilla extract, and agave syrup.

Separate the mixture into two bowls, add shredded coconut to one, and unsweetened cocoa powder to the other.

Cover with plastic wrap and let sit in your fridge at least 3 or 4 hours before serving. It tastes perfect overnight.

You can serve each flavor aside or do a combo. In a glass, put your first layer of oat using a spoon. Then add carefully the second layer. Top with shredded coconut and dark chocolate.
