An easy, meal prep friendly recipe for a veggie & hummus sandwich. So tasty, filling and packed with nutrients, you won’t believe it’s vegan!
This is one of my staple lunch sandwiches, it’s packed with veggies, a homemade oil-free hummus, and a tangy tahini lemon dressing.
As much as I love cooking, I barely make lunch so I am most likely inclined to skip it. Since I am trying to make healthier choices, I find that meal prepping or ingredients prepping to be more exact is the perfect solution for me.
Every Sunday, I cut up whatever veggies I have on hand, make some spreads/ sauces and cook some grains. It’s so easy to just quickly put together a sandwich or a salad with already prepared food! And bonus it keeps me from bad food choices like eating a whole bar of chocolate for lunch!
This sandwich is healthy. Tasty.
Packed with nutrient-dense veggies.
Creamy with the avocado.
Tangy with the tahini lemon sauce.
You can use whatever raw vegetables and spreads combination you prefer, it’s totally versatile. Mine calls for shredded raw white & red cabbage, baby spinach, thinly sliced carrots, cucumbers and of course avocado!
Sometimes I like to add some fermented beets and parsnips, or some dill pickles!
I use my homemade hummus (you can find my easy oil-free recipe here) but you can use whatever brand of store-bought hummus you like. I like this one.

- 4 Slices Whole grain bread
- 2 Tbsp Hummus
- 1/2 Shredded carrot (medium-sized)
- 1/2 Cup Baby spinach
- 1/4 Thinly sliced white cabbage (medium-sized)
- 1/4 Thinly sliced red cabbage (medium-sized)
- 1/2 Sliced cucumber
- 1/2 Avocado
- 1/2 Tbsp Tahini
- 1 Tbsp Olive oil
- 1/2 Tbsp Lemon juice
- Salt ( to taste )
- Pepper ( to taste )
Prep all of the veggies by cutting them. Place your choice of bread slice in a toaster.
In a small bowl, mix all the sauce ingredients together and check for taste.
Once the bread is nice and toasted, spread a tbsp of hummus on each sandwich.
Starting adding the veggies by layers on the bread.
Finish off with a drizzle of tahini lemon sauce and wrap.
